Pickled Pork Hocks or pigs Feet. Try this Pickled Pork Hocks/pigs Feet recipe:

Ingredients
3 lb fresh pork hocks; Or more
3 c Water
1/2 ts Allspice
Few peppercorns
3 c White vinegar
2 Onions; quartered
4 ts Salt
6 Cloves
2 Bay Leaves
1 tb Sugar

Preparation

Wash the hocks/feet and fit into a deep Dutch oven. Cover with water and vinegar. Bring to a boil and skim. Add onions, cloves, allspice, bay leaves, salt, peppercorns and sugar. Cover and simmer until meat is tender about 3 hours. Cool in the liquid then lift hocks/feet into a wide-mouthed jar and pour enough of the liquid over them to cover. Keep chilled in the refrigerator

Pork Meatball Recipe

Italian pork meatballs recipe in tomato sauce is ideal with spaghetti, rice or mashed potatoes.
Baking the pork meatballs in the oven for 10 minutes is best. The pork meatballs cook more evenly and don’t break up, are leaner and poach better in the sauce. 
You can fry them if you wish.

 Makes: 12 - 15

Ingredians:

60g soft white breadcrumbs, preferably from stale bread
60ml milk
400g minced beef
200g minced pork 
1 egg
30g grated Parmesan
 a grating of nutmeg
2 tbsp finely chopped flat-leaf parsley and mint

For the sauce:

2 x 400g tins plum tomatoes
1 clove of garlic
3 tbsp olive oil
2 bay leaves

Preperation:

Preheat the oven to 220C and grease a baking tray.
Put the breadcrumbs in a small bowl with the milk and leave it for 10 minutes, or until the bread absorbs the milk.
Mix together with all the other ingredients for the meatballs and season with salt and pepper.

Using your hands, mould them into roughly 40g balls if you are eating them alone or with mash or rice, or 20g balls for eating with pasta (you could weigh the first one to get an idea). Put the balls on the prepared tray and bake for 15 minutes for big ones or eight minutes for small ones, turning them once, until they are just starting to brown. Alternatively, fry the polpette in a sauté pan in a little olive oil, turning them carefully until evenly browned.

Meanwhile, make the tomato sauce. Coarsely chop the tomatoes or pass them through the food mill. Crush the garlic with the back of a knife. Heat the oil in a large, deep frying pan, add the garlic and cook gently over a low heat until the scent rises up from the pan. Add the tomato and bay leaves and simmer for 15 minutes, stirring and breaking up the tomatoes with the back of a wooden spoon until the sauce is thick. Season with salt and pepper, then add the meatballs and cook them in the sauce for a further 15 minutes.

Serve with bread on the side, or with mashed potatoes or rice. If you are serving them with pasta, remove the meatballs from the sauce with a slotted spoon on to a warm plate. Mix the sauce with cooked spaghetti in a wide bowl, then dot with the meatballs and serve.

4 (about 1 lb/500 g) well-trimmed pork chops
1 tbsp (15 mL) canola oil
1 can (284 mL) CAMPBELL'S® Condensed Low Fat Cream of Mushroom Soup
1/2 cup (125 mL) water
2 cups (500 mL)  sweet potato, cut in 3/4" (2 cm) chunks
1/2 tsp (2 mL) garlic powder
1 tbsp (15 mL) dried parsley flakes, crushed
1/2 tsp (2 mL)  dried oregano leaves, crushed

Directions 
  1. Brown pork chops well in heated oil at medium-high heat in skillet – about 4 minutes per side.
  2. Add soup mixed with water and sweet potato, garlic powder, parsley flakes and oregano. Simmer, covered, until pork chops are cooked through – about 10 minutes.

Whether it is cooked in the crockpot or in a big saucepan in the kitchen, there is no better kiwiana meat treat than pickled pork. If you do choose the slow cooked version, cook longer with golden syrup and bay leaves.

To make Pickled Pork, you will need:

    1 kg Pickled Pork
    8 whole Cloves
    1 Onion, cut in half
    2 x 6cm Cinnamon Sticks
    1/2 cup Cider Vinegar
    2 tablespoons Brown Sugar
    2 tablespoons Currants or Raisins
    1 tablespoon freshly grated Ginger
    Star Anise if desired
    Water to cover

How to make Pickled Pork:

Stud the pork with the cloves.

Place in a deep saucepan with a lid.

Add all remaining ingredients and water until pork just covered.

Bring to the boil, cover tightly with lid and simmer gently – allow 1 hour per kilogram. Turn pork after half an hour.

Drain and allow to cool before slicing to serve.

Serving Pickled Pork:


You can cook it the day ahead and serve cold or on the day and serve hot; no bones so easy to carve, so easy and truly delicious. Serve with a variety of salads or serve with thickly sliced white bread and fruit chutneys.

An easy sauce idea is to boil up some of the fruit chutney with water to thin and pour over the slices of the pickled pork on the serving dish.

    1 1/2 cups cold water
    1 cup finely chopped onion
    1/2 cup finely chopped celery
    1 teaspoon ground black pepper
    2 bay leafs
    1 teaspoon dried savory
    1/2 teaspoon dried rosemary
    1/2 teaspoon grated nutmeg
    1/2 teaspoon cinnamon
    Salt
    1/2 cup old-fashioned rolled oats
    Pastry for two double-crust, 9-inch pies
    1 egg, beaten, for glaze

Instructions
  • In a large, heavy frying pan, combine pork with cold water and heat to boiling point. It should be slightly soupy.
  • Add onion, celery, pepper, bay leaf, savory, rosemary, nutmeg and cinnamon. Cook, covered, over medium-low heat for 1 1/4 hours; stir often. Add more water if mixture dries out.
  • Halfway through cooking time, season with salt to taste.
  • Stir in rolled oats and cook, stirring, for 1 to 2 minutes. Remove bay leaf and allow to cool. Setting the entire pot in the snow bank speeds up this process!
  • Meanwhile, line two 9-inch pie plates with pastry. When meat mixture is lukewarm, divide it between two pie shells and spread it out evenly.
  • Brush around outer edge of pastry with the beaten egg. Place top crust on the tart and press gently around the edge to seal. Trim pastry, crimp edges and cut steam vents in top crust. Decorate as desired.
  • Bake in preheated 425°F oven for 15 minutes, then reduce heat to 375°F and bake another 25 minutes or until crust is golden.

  • Dust the diced potatoes with flour and shake off any excess. The flour will soak up extra moisture and make the potatoes crispy. Add a little more oil to the pan and let it get very hot. Add potatoes in a single layer to the pan and fry, in batches if necessary, until golden brown and crisp on all sides. Try not to move the potatoes around too much, allowing them to get crispy.
  • Remove the potatoes from the pan and add the steaks back. Layer with potatoes and onions and sprinkle cheese on top.
  • Place in the oven and bake for 10 to 15 minutes, until cheese has melted. Serve immediately.

Yield: Serves: 4

Ingredients

    2 tablespoons extra-virgin olive oil
    4 4-oz. pork loin chops
    Kosher salt and freshly ground black pepper
    2 shallots, sliced about 1/4 inch thick (about 1 cup)

    4 sprigs thyme
    2 medium apples (about 1 lb. total), cored and sliced 1/4 inch thick
    1/2 cup brut wine or dry cider
    1 tablespoon cold unsalted butter

Preparation

1. In a large, heavy skillet (preferably cast-iron), heat oil over medium-high heat. Season pork chops with 1/2 tsp. each salt and pepper; add to skillet. Cook until chops are browned on both sides, about 8 minutes total; transfer to a plate.

2. Reduce heat to medium; add shallots to skillet. Cook, stirring occasionally, until shallots are soft and translucent, 6 to 8 minutes. Stir in thyme, apples and 1/4 tsp. each salt and pepper. Nestle chops and any collected juices in apple mixture and pour wine into skillet; partially cover and cook until apples are tender and wine has reduced to a thick sauce, about 10 minutes.

3. Transfer chops to 4 plates. Stir butter into apple mixture, divide evenly among plates and serve.
